We picked up our final CSA basket last week, and I’m super sad to have to say goodbye to our bi-weekly basket of fresh produce. This is definitely something we’ll have to sign up for again next year.
And, once again, I completely forgot to take pictures of our basket. I’ll blame it on how flustered I was last week, as I only remembered that we even needed to pick up our basket about 15 minutes before the pick-up ended. Whoops.
Here’s what was in our final basket:
-butternut squash
-green tomatoes
-tatsoi
-arugula
-lettuce
-variety of sweet peppers
-beets
-fresh sage
Last night I made bell peppers stuffed with brown rice, mozzarella cheese, onion, sweet peppers, and bread crumbs. Veggie pizza has become a weekly staple in our house because you can throw just about anything on a pizza and make it taste awesome. We topped this week’s pizza with pesto, broccoli, bell peppers, sweet peppers, tomatoes, and arugula. Yum.
I’m looking for some recipe suggestions for the butternut squash, tatsoi, and fresh sage. Thoughts?
